Ingredients:
50g Sichuan peppercorns
1 tsp coriander seed
1 tsp whole cloves
2 star anise pods
1 stick cinnamon
5 dried red chilies
100g sea salt
Directions:
- Combine the Sichuan peppercorns, coriander, cloves & star anise in a bowl & cover with water. Drain.
- Place the spices in a heavy-based pan & dry-roast over low heat until the spices have dried & became fragrant. Add the dry chilies & continue to dry-roast, stirring constantly for about 2-3 mins. Remove from the heat & cool completely.
- Add the salt mix thoroughly & grind in a spice grinder to a fine powder. Store in an air-tight container.
