Ingredients:
1 packet banana leaves (cut 3x4 inch or 3x5 inch)
600g minced chicken
1 egg
1/2 cup coconut milk
1 tbsp sugar
1 tsp salt
Paste
3 lemongrass
3 cloves garlic
1 large red onion
1" ginger
1 tsp turmeric powder
1 tbsp fennel powder
1 tbsp coriander powder
1 tbsp cumin powder
4 dried chili (I used 6 fresh red chili deseeded)
1/2 cup cooking oil
Instruction:
- In a food processor, blend all the ingredients until it forms a smooth paste.
- In a saucepan, saute the paste over medium-high heat until fragrant.
- Add the coconut milk, sugar, and salt. Stir-fry until the paste thickens. Remove from the heat and let it cool completely.
- In another bowl, add the minced chicken and egg. Mix them together till combined. Then add the cooked paste and mix together.
- Take one banana leaf wrapper and place 1 tablespoon of the filling in the center. Fold both opposite ends of the banana leaf and press both sides under. Repeat the process until you reach the finish.
- Steam in a preheated steamer for about 8-10 mins. Then toast in the oven for 5-8 minutes (Optional)
