Ingredients:
3 lemons
200ml heavy cream
3-4 tbsp sugar
2 tbsp lemon juice
1 tsp lemon zest
Instructions:
- Wash the lemons well and let them dry. Cut lemons in half longwise, then use a spoon and scoop out the inside of the lemon (Do it carefully)
- Squeeze the lemon just and set aside.
- Combine heavy cream, sugar, and lemon zest in a small saucepan. Heat over medium-low and simmer, stirring constantly, for about 3 minutes or until tiny bubbles appear.
- Remove from heat, add lemon juice, and whisk to combine. Allow to cool for 10 minutes.
- Strain through a fine mesh strainer to remove zest. Pour the mixture into the lemon shells.
- Allow to cool completely to room temperature, then refrigerate for at least 2 hours or until set. Cover and keep in the fridge.
