Ingredients:
3-4 ripe bananas
2 tbsp sugar
1/2 tsp baking soda
1/2 cup rice flour
1 tsp baking powder
2/3 cup AP flour
Instructions:
- Mash the ripe bananas with sugar and baking soda.
- Sift in the dry ingredients and mix to combine.
- Cover the bowl with plastic wrap and let the batter rest for 10-15 minutes.
- Heat oil in a wok over medium-low heat. Dip a spoon or ice cream scooper into the oil, then scoop a spoonful of batter. Place the batter into the hot oil. (Avoid overcrowding, as the fritters will expand.)
- Once the fritters float, start flipping them. Continue until they are golden brown and fully cooked. Remove them and place the fritters on paper towels to absorb the oil. They are best served hot. Enjoy!
