Ingredients:
Egg ~ per fold
2-4 bacon
Chicken Sausage ~ Recipe here
Sliced cheese ~ your preference
Griddle cake/bun
225g All-purpose flour
2 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1 egg
323ml cup milk
28g butter ~ melted
Maple Balls
1 cup (240ml) maple syrup
Directions/Instructions:
- In a small saucepan, simmer the maple syrup until it reaches 265F, about 10-15 minutes. Pour the mixture onto a parchment baking sheet. Spread it out evenly, then let it cool at room temperature. Cut the maple syrup into small pieces, roll it into balls, and set it aside for later use.
- On a pan over medium heat, cook the bacon until it is crispy. Set aside
- In a medium bowl, combine all the dry ingredients and whisk them together. Then, add the liquid ingredients and mix until combined. Let it rest for 15 minutes.
- Using a lightly greased ring mold over a flat top or nonstick pan, heat over medium heat and add unsalted butter. Add 3 tbsp of batter, sprinkle in 6-8 maple syrup balls, and poke them into the batter. Cook for 2-3 minutes. Remove the ring mold, flip, and repeat on the other side. Repeat with the remaining batter until finished.
- For the folded eggs, beat 1 egg in a small bowl and place onto a lightly buttered surface heated over medium heat. Spread out to a rectangle using a spatula. Cooked 75% of the way, fold the egg into a square egg. Remove immediately.
- Place the griddle back over the pan. Place a slice of cheddar cheese on the bottom "bun" and let it melt.
- To serve, top the cheese/bottom bun with cooked crispy bacon, followed by the egg, and the top bun brushed with maple syrup. Enjoy!
