Ingredients:
350g All-purpose flour
150g Bread flour
1/2 tsp salt
2-3 eggs (150ml)
60ml water
1 tbsp sesame oil
1 tsp Lye water (Kansui)
Directions/Instructions:
- In a bowl, whisk egg, water, sesame oil and Lye water to be incorporate. Set aside.
- Add the dry ingredients to the noodle/pasta maker machine. Press start and let it run for 3 mins. Off the machine and press to start again and pour the egg mixture. Allow the mixture to run for 3 mins. Repeat this step 3x (Press the "Pause" button and scrape the side as needed and continue to mix)
- Off the machine and then allow the dough to rest for 20 mins. Then press the "Start" button and continue to run. Let the machine do the wonder!
Note:
Eggs + water = 210ml
