Ingredients:
1 can of Pineapple
1 bottle of Red Cherries
50g butter
50g brown sugar
Batter for Cake:
180g All purpose flour
150g butter
1½ tsp baking powder
100ml butter milk
½ cup brown sugar
½ cup castor sugar
2 eggs
Directions:
- Preheat the oven to 180 deg C.
- Melt the butter & mix with the brown sugar, spread on the pan bottom. Arrange the pineapple rings on the pan. Put a cherry in the middle of the each ring.
- Cream butter & sugar until creamy. Add eggs one at a time. Mix in flour & baking powder & finally the buttermilk.
- Carefully spread the mixture over the pineapple & make it level.
- Bake for 40 minutes & invert into a plate while still warm.
