Ingredients:
130g unsalted butter
60g sugar
1 large egg
1 tsp vanilla extract
170g AP flour
1/2 tsp baking soda
1/8 tsp salt
80g rice bubbles (crispy rice)
70g chocolate chips
Directions/Instructions:
- Cream butter and sugar till light and fluffy.
- Then add egg and vanilla extract, and mix well.
- Sift in flour, baking soda, and salt. Continue to mix well.
- Then pour in crispy rice and chocolate chips, fold well with a rubber spatula.
- Scoop the mixture with a dessert spoon and drop it on a lined baking tray and bake a preheated oven at 150 deg C for about 25 mins or until golden crisp.
- Cooldown completely and store in an airtight container.
