Ingredients:
25g icing sugar / powder sugar
55g unsalted butter
80g cake flour
½ tsp instant coffee powder
1/8 tsp salt
1 tsp hot water
15g chopped walnuts (Optional)
15g icing sugar / powder sugar
Directions:
- Mix hot water with instant coffee powder. Set aside.
- Mix unsalted butter, icing sugar & salt. Pour in the concentrated coffee mixture. Then add sieved flour & chopped walnut. Mix everything into dough
- Shape level tablespoons of dough into 1¼-inch balls. Place on ungreased baking sheets.
- Bake in preheated oven at 180 deg C for 20 minutes or until cookies are set & lightly browned. Remove from oven. Sift icing sugar over hot cookies on baking sheets.
- Cool on baking sheets for 10 minutes; remove to wire racks to cool completely. Sprinkle with additional powdered sugar, if desired.
- Store the cookies in airtight container.
