Ingredients:
4 white fish fillets
1/2 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
1 tbsp olive oil
1 lime, zest and juice
Sauce
1 can (13oz) full-fat coconut milk
1 tbsp lime juice
1 tsp lime zest
1 tbsp chopped cilantro
Salt & pepper to taste
Instructions:
- Season the fish fillet with garlic powder, paprika, salt, and pepper. Drizzle with lime juice and zest, then let it marinate for about 10 minutes.
- Heat 1 tablespoon of cooking oil over medium-high heat in a large skillet. Add the marinated fish fillets and cook for 3 to 4 minutes per side, until golden brown and cooked through. Remove the fish from the skillet and set aside.
- In a small saucepan, combine coconut milk, lime juice, lime zest, salt, and pepper. Heat over medium-high heat. Let the sauce simmer for 5 to 7 minutes, until it thickens slightly.
- Serve the fish hot, drizzled with the coconut cream sauce. Garnish with additional cilantro if desired.
