Ingredients:
1-1/2 pound chicken breast ~ cut 1" chunks
1/2 cup cornstarch
2 egg ~ beaten
1/2 cup plain flour
Oil ~ for frying
1 cup pineapple ~ chunk
1 red bell pepper ~ cut 1" chunks
1 green bell pepper ~ cut 1" chunks
1/2 yellow onion ~ cut 1" chunks
Sauce
1/2 cup sugar
1/4 cup brown sugar
1/4 cup apple cider vinegar
1/3 cup ketchup
4 tsp soy sauce
2 cloves garlic ~ minced
Instruction:
- Whisk the sauce ingredients together in a saucepan & bring to boil. Add the cornstarch solution to thicken the sauce & set aside.
- In a ziplock bag, add cornstarch & chicken; shake until all the pieces are well coated.
- Heat oil in frying pan on medium-high heat. Dip the chicken pieces in a beaten egg then into a flour.
- Then add into hot oil & fry the chicken for 2-3 mins until cooked through & crispy.
- When done remove all but 1 tablespoon oil. Add bell peppers, onion, pineapple & cook for 1-2 mins until crisp-tender.
- Add the sauce & still coat for 30 sec then add the cooked chicken. Stir until the sauce has thicken & bubbling.
- Serve immediately
