Ingredients:
1 packet Ban Mian Noodles
1 Japanese cucumber, julienne
Cherry tomato, cut halves
Hard-boiled eggs
Kimchi
Soup
1 silken tofu
2-3 cups water
1 tbsp sea salt
1 tbsp sugar
1 tbsp peanut butter
4 tbsp sesame seeds
Ingredients:
- In a food processor, combine the soup ingredients and blend until smooth. If the base is too thick, add water to reach the preferred consistency.
- Cook the noodles in boiling water according to the package instructions. Drain the noodles and rinse them under cold running water to cool.
- Transfer the cooked noodles to a serving bowl and pour the cold soup over the noodles. Garnish with julienned cucumbers, cherry tomatoes, and a halved boiled egg. It's best to serve with kimchi on the side.
