Ingredients:
4 chicken legs
2 tbsp Kabsa Mix (see below)
2 cup Basmati rice
4 cups water
1 large onion, finely chopped
2 tbsp chopped parsley
Instructions:
- In a non-stick pot, heat 1 tablespoon of vegetable oil. Saute the chopped onion until translucent, then add the chicken and cook until golden brown.
- Stir in the Kabsa mix. Add four cups of hot water and stir until the mix is dissolved.
- Remove the chicken and transfer the mixture to the rice cooker. Add the Basmati rice and gently stir. Return the chicken and cook as usual.
- Garnish with chopped parsley.
Kabsa Mix
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp cinnamon powder
1/4 tsp clove powder
1/4 tsp nutmeg powder
1/2 tsp ground black pepper
1 tsp cardamom powder
1 tsp ginger powder
1 tsp fennel powder (Optional)
