Ingredients:
6 mini cucumbers
1/2 tbsp salt
1 yellow onion, sliced thinly
1 large carrot, sliced thinly
Sauce
1 tbsp gochugaru (red chili pepper)
1 tbsp sugar
1 tbsp soy sauce
1/2 tbsp minced garlic
1 tsp sesame oil
sesame seeds
Instructions:
- Slice the cucumbers into rounds. Toss the cucumbers in a large bowl and sprinkle salt evenly over them. Let them sit for 30 minutes, then rinse and drain.
- Add the sliced onions, carrots, and all the sauce ingredients to the cucumbers. Toss everything until the cucumbers are well coated with the seasoning.
