Homemade Rice Cake Noodles


Ingredients (A)
30g rice flour
30g tapioca flour
2 egg yolk

Ingredients (B)
200g Tapioca flour
200g Rice flour
1 tsp salt
350ml boiling water
2 tbsp oil

Directions/Instructions:
  1. Mix all ingredients (A) in a bowl and set aside.
  2. Whisk together the rice flour, tapioca starch, and salt in a large mixing bowl. Gradually pour about half of the boiling water into the flour mixture. Stir the mixture with a large fork, chopsticks, or a wooden spoon, and pour the water into the bowl. Once the water has been absorbed into the flour, add the mixture (A) and gradually mix in the remaining boiling water. Continue stirring until the water is fully absorbed.
  3. Let the dough cool for 2-3 minutes, stirring periodically to release steam. Then, begin kneading it. If it is still too hot to touch, stir it for another 1-2 minutes to cool it off.
  4. Knead the dough until nearly all the flour is incorporated into the clump of dough.  Occasionally, wipe the dough along the sides of the bowl to catch any loose flour.
  5. Once all the loose flour has been incorporated into the dough, turn everything over the counter or work surface and knead the dough for another 2-3 minutes. The dough will feel a little tacky and may stick to your fingers. If it is wildly sticking, add 1-2 tablespoons of rice flour and work it into the dough. Shape the dough into a disc. It should look smooth.
  6. Divide the dough into 8 equal portions (90-100g).  Shape the dough into a short, thick log and lay it lengthwise on the surface.  Starting from the middle, roll out the dough and gradually work further apart, like a long dough rope.  It should be about 16 inches long and over 1/2 inch in diameter.  Roll the dough rope off to the side.
  7. Repeat the process till all the dough has been shaped into a rope.  Then, grease the knife and cut the dough into 2 inches.
  8. Transfer all the pieces of cut rice cake to a large baking sheet and cover them with a kitchen towel until they are ready to boil.
  9. Add water to a large pot and boil. Once the water has boiled, slowly pour in the cut rice cake and cook. Once the rice cake floats to the surface, dish it out and rinse under cold water.
